Stimulating the metabolism mainly means increasing the utilisation of certain components, such as fats stored in adipose tissue, to produce energy.
This process is called thermogenesis, i.e. energy production from the oxidation of body fat. Thermogenesis is called adaptive, as it can be modified by certain factors, such as exposure to cold, or foods introduced in the diet.
Thus, increased thermogenesis corresponds to increased energy production from the oxidation of body fats, resulting in weight reduction.

Many varieties are used for the extraction of the essential oil, which is used by the perfume industry and as a flavouring additive.
Parts used: The unripe, dried fruit is rich in a mixture of sympathomimetic amines, of which synephrine is the main constituent.
Properties: synephrine may be useful in weight control, as it stimulates thermogenesis (production of body heat = increased calorie consumption) and lipolysis (utilisation of fat for energy).
